Soba Noodles with Marinated Grilled Tuna, Broccoli and Cilantro
Garlicky, spicy and bright with lime, this noodle dish is delicious and healthy! The Chinese believe that “The sour juice protects the respiratory system…and cilantro helps when you’re congested.”
Grilled Soy & Lime Marinated Tuna serves 2
4 tablespoons low sodium soy sauce
2 teaspoons lime juice
2 teaspoons honey
2 tablespoons canola oil
Combine ingredients in a bowl and stir well to incorporate. Pour the mixture into a shallow dish large enough to fit the fish. Add the fish and marinate in the refrigerator for about 1 hour. Remove the fish from the refrigerator 15 minutes before grilling.
Soba Noodles
8 ounces soba noodles
2 quarts water
In a large sauce pan, bring the water to a rapid boil. Add the noodles and cook, stirring, until tender, 3 minutes. Drain and rinse under cold water. Set aside.
Blanching Broccoli
Separate the head of broccoli into individual florets. The size and shape of the florets are dependent on your personal preference and Blanch florets for 2 minutes in boiling salted water. Remove and chill rapidly in ice water. Drain onto paper towels and reserve for later cooking.
To Grill the Tuna:
Get a charcoal or stove-top cast-iron grill very hot. Grill each side for only 2 to 3 minutes. The center should be rare, or the tuna will be tough and dry. Allow to rest for 5 to 10 minutes, slice the Grilled Tuna into 1/4 inch slices.
Broccoli & Garlic Stir-Fry
Ingredients:
2 tbsp canola oil
6 ounces broccoli florets
2 garlic cloves, minced
1/4 teaspoon red pepper flakes
4 tbsp low-sodium soy sauce
1 teaspoon fish sauce
2 tsp sesame oil
