Aloo Gobhi

Seasoned Cauliflower and Potatoes

1 medium head of cauliflower, florets cut in 1 1/2 inch pieces
2 tbsp vegetable oil
1 medium Spanish onion, chopped fine
1 jalapeños pepper, seeded and finely chopped
2 garlic cloves, chopped fine
12 oz. fingerling potatoes, cut into 1 inch pieces
1 tsp turmeric
1/4 tsp cumin
1/4 tsp coriander
1/2 tsp sea salt
1/4 tsp garam masala
1 tbsp butter
1 tsp ginger root, peeled and grated

Heat oil in large sauté pan. Add the onion, jalapeños, garlic and potatoes and saute, medium heat for 7 minutes, until onion is translucent but not browned. Add the cauliflower and sauté for 3 minutes. Add the tumeric, cumin, coriander, salt and garam masala. Stir gently to combine and continue cooking for 5 minutes. Add the butter — when foaming, add the ginger and again gently mix to combine well. Add 5 tbsp cold water, cover and simmer for 5 minutes.
